Ramly Burger

As a Malaysian, now and then a Ramly burger craving hits. And when you’re living abroad, the only thing you can do is try to recreate that flavor. Not gonna lie, I nearly cremated a bun, wasted a few eggs, and had to channel my inner gerai Ramly dude to realize this burger. I salute all the Ramly stall owners!

My attempt is not even close to the real Ramly burger, but here’s the recipe if you’re brave enough to try.

method

    Mix burger patty ingredients together and taste test a tiny piece by frying up or microwaving a small chunk. Adjust seasoning as needed.

    Butter up a pan and fry the burger patties.

    When one side is done, break up the middle a bit with your spatula (like the hawkers do), then sprinkle on pepper, Lea & Perrins, and Maggi seasoning.

    Flip the patties until both sides are done, then set aside.

    Butter your buns and fry them till golden and crisp – just don’t nearly incinerate them like I did.

    Butter a shallow pan, crack a couple of eggs onto it, and spread them out. Heat control is key – too hot and they set too quickly, too low and it’s a mess.

    Once the eggs are spread out, place your cooked burger patty immediately, then a slice of cheese, then wrap it all up before the eggs set. You can also go for a double patty if you’re feeling ambitious (patty, cheese, patty, wrap).

    Assemble your buns: mayo, tomato, onions, egg-wrapped patty, cabbage, more mayo, BBQ sauce, and the key ingredient – Maggi chilli sauce!

    Wrap it all up in baking paper if you don’t want your kitchen (or your shirt) covered in sauce.

    Feast away and prepare for a glorious mess.
