Kimchi Bacon Fried Rice

Kimchi bacon fried rice is my go-to when I need a fast and dirty lunch - so easy but so delicious and satifying. You could even argue that it is semi-healthy due to all the probiotics in the kimchi.

step by step

method

    Fry bacon over medium heat till fat renders out.

    Add in spring onion, stir fry till translucent / soft

  3. 3

    Move everything aside and add in the 1 tbsp of soy sauce

  4. 4

    Let soy sauce caramelize a bit for a few seconds then mix everything together.

  5. 5

    Add in 1 cup of kimchi, stir together, then add the teaspoon of sugar.

    Let the kimchi reduce and get more flavorful

    Add in your 2 cups of cooked rice and mix well.

    Add in crunchy seaweed here if you are using and mix well

  9. 9

    Turn off the heat while you fry up your eggs

  10. 10

    In a separate pan, fry up two eggs to your liking. Ooey gooey sunny side up works best for kimchi fried rice.

    Dish up the fried rice and top with a sunny side up. Enjoy!

tips & notes

If your rice is freshly cooked, spread it on a tray for 10 minutes so the steam escapes before frying, otherwise you might get really soggy fried rice which ain’t great.
