Garlic Shrimp Fried Rice
This is something I crave fairly often. Garlicky rice tossed with slightly charred succulent and sweet shrimps makes for a great comfort food that I miss from home. Here's my recreation.

Lightly season the shrimp with salt and set aside while you prepare the other ingredients

Crack the eggs into a bowl, add a splash of soy sauce and a dash of white pepper, beat lightly

Heat a bit of oil in a wok or deep frying pan on medium heat

Add the eggs and scramble quickly. Remove before fully set and set aside

Add a little more oil to the wok and fry one quarter of the garlic for about 10 seconds to infuse the oil. Keep the heat moderate so the garlic does not burn.

Once the garlic turns golden, add the shrimp and cook until just done. Remove and set aside.

Add a little more oil if needed, then add the remaining garlic and the white parts of the spring onions. Stir-fry briefly until fragrant.

Add half of the spring onions and stir fry for a minute

Add the rice and break it apart, tossing well

Season with salt and soy sauce and mix thoroughly

Return the shrimp and eggs to the wok, then add the green parts of the spring onions. Toss everything together until heated through.

Taste and adjust seasoning if needed. A little MSG can help (as it always does)

Top with extra spring onions and serve.

tips & notes
I like to chop up a bunch of spring onions and freeze. They do beautifully in cooked dishes that require chopped spring onions.
The life story you didn't ask for
I grew up eating this so it is a dish I hold really dear to my heart. You really wouldn’t think that the simple flavors of shrimp x fried garlic x spring onion would make such a good combo.
